Ingredients
- 1–1/4 cups cake mix (white or Funfetti)
- 12 tablespoons (170 grams) butter
- 2/3 cup (192 grams) sweetened condensed milk
- 12 cups (516 grams/18 ounces) mini marshmallows
- 1–1/2 teaspoons clear vanilla extract
- 1 teaspoon pure vanilla extract
- 1/4 teaspoon almond extract
- 10 cups (280 grams/10 ounces) Rice Krispies
- 1 cup sprinkles (any kind you like)
Instructions
- Place the cake mix in a microwave-safe bowl and heat on high in 30-second intervals, stirring after each interval, until the cake mix reaches 165°F. This heat treats the raw flour in the cake mix and makes it safe to eat.
- Generously butter a 9 x 13-inch baking pan; set aside.
- In a large pot or Dutch oven, melt the butter over medium heat. Add the sweetened condensed milk and cake mix, whisking to dissolve the dry ingredients. Once everything is smooth, add the marshmallows, stirring often until completely melted.
- While you wait for the marshmallows to melt, put the Rice Krispies in the largest bowl you have (you may have to do this in two batches if you don’t think you can add all the ingredients and stir to coat in your largest bowl; keep the marshmallow mixture warm over medium-low heat if you have to do it in two batches). When the marshmallow mixture is homogenous and smooth, pour over the Rice Krispies, tossing with a rubber spatula until completely coated. Working quickly, pour into the prepared baking dish and press down gently with the spatula or buttered fingers to form an even layer. Generously sprinkle the sprinkles over top. Cut into squares and serve.
Notes
These will stay soft for a few days, longer than regular Rice Krispies treats, because of the sweetened condensed milk.
