Fig Jam and Beet Mimosas

Description

An earthy, slightly sweet take on your traditional mimosa: beet juice and fig jam are muddled with fresh figs and topped with Prosecco!


Ingredients

Scale
  • One 8.5-ounce fig jam (fig jam with orange highly encouraged, too)
  • 1 cup beet juice
  • 1/2 cup orange juice (about 2 oranges)
  • Juice of 1 large lime
  • 6 fresh figs, halved plus more for garnish
  • Prosecco, Champagne or sparkling wine

Instructions

  1. In a medium mixing bowl, combine the fig jam, beet juice, and orange and lime juices, and whisk to combine.
  2. In a small bowl, muddle the fresh figs with the back of a wooden spoon to release as much of the juice as possible.  Pour the figs and their juice through a strainer into the bowl with the jam-juice mixture, pressing down with the back of a spoon to press out the liquid.  Discard the crushed figs.  Strain the mixture into a small pitcher, swirling to push as much juice through as possible.
  3. To serve, pour 2 ounces of the mimosa mix into a serving glass or champagne flute.  Top with Prosecco, to taste (start with 2 ounces).  Garnish with halved figs and lime and orange halves.
