Description
Creamy, cheesy spicy corn dip is the perfect make-ahead party food because the flavor only improves the longer it sits in the refrigerator.
Ingredients

- Three 11-ounce cans sweet corn, drained
- One 7-ounce can chopped green chiles, undrained
- 4 to 6 ounces pickled jalapeños, drained with some liquid reserved to add to dip
- 1 red, yellow or orange bell pepper, cored seeded and finely minced
- 4 to 5 green onions, white and green parts finely minced
- 1 cup mayonnaise
- 1 cup sour cream
- 1 teaspoon garlic powder
- Kosher salt and freshly ground black pepper, to taste
- 12 ounces (3/4 pound) grated sharp cheddar cheese
- Tortilla chips or, even better, Fritos, to serve
Instructions
- Combine all of the ingredients (except the chips) in a large mixing bowl and stir to fully combine. Add some of the pickled jalapeño liquid, to taste. Taste for seasonings and adjust if necessary.
