Cake Batter Rice Krispie Treats

Forget everything you know about Rice Krispies treats—well, not everything because we’re keeping the snap, crackle, and pop. Discover the whimsical twist on a classic with our Cake Batter Rice Krispies Treats recipe, featuring sweetened condensed milk, vibrant sprinkles, and a mix of extracts for that irresistible cake batter flavor. Perfect for dessert lovers seeking a rich, gooey, and nostalgic treat.

Before we get into the nitty-gritty of this concoction, let’s talk about a game-changing ingredient that turns the ordinary into extraordinary: sweetened condensed milk. Not just for your grandma’s famous fudge recipe, sweetened condensed milk brings a creamy richness that binds the flavors together in an embrace so tight, even the marshmallows get jealous. Its addition to Rice Krispies treats introduces a velvety texture and makes them extra-gooey, plus it helps keep the bars softer for longer.

Now, onto the pièce de résistance: making everything taste like cake batter without actually baking a cake. The secret? A combination of cake mix and extracts. By incorporating cake mix into the recipe, we’re infusing the treats with that unmistakable birthday cake flavor that’s both nostalgic and addictively delicious. And the clear vanilla, pure vanilla, and almond extracts? They are the key to that classic, nostalgic flavor—don’t skip the clear vanilla!

Let’s break down this magic, shall we? I like extra-gooey Rice Krispies treats, so I always increase the marshmallow-butter ratios in typical recipes to ensure this. Here’s another version of Rice Krispies treats with brown butter.

  1. The Cake Mix Warm-Up: Heating the cake mix not only makes it safe to eat by zapping any pesky bacteria, but it also helps to unleash the flavor, ensuring every bite of the treat has that cake batter punch.
  2. Butter & Sweetened Condensed Milk: Melt these together, and you create a velvety foundation that’s rich, creamy, and ready to welcome the cake mix with open arms.
  3. Marshmallow Meltdown: This is where the magic turns into a spectacle. Melting the marshmallows into this mixture creates a gooey, stretchy concoction that’s the hallmark of any great Rice Krispies treat.
  4. A Trio of Extracts: The combination of clear vanilla, pure vanilla, and a dash of almond extracts give these that classic cake batter flavor.
  5. Rice Krispies Pool Party: Diving into the largest bowl you’ve got, these puffed grains of rice get thoroughly coated in the marshmallowy, cake batter goodness, ensuring every bite is coated. We’ve got an enormous mixing bowl that works well for these—no, I’m not kidding…it’s like 16 quarts! You might be surprised how often you’ll actually use it.
  6. Sprinkles, Because Why Not? It wouldn’t taste like cake batter without the colorful joy of sprinkles, adding a crunch and a punch of color that makes every square a feast for the eyes.

Crafting these Cake Batter Rice Krispies Treats is not just about mixing ingredients; it’s a reminder that sometimes, the best flavors come from thinking outside the box—or in this case, inside the cereal box, with a detour through the boxed cake mixes.

Whether you’re whipping up a batch for a party, a picnic, or just because every day deserves a sprinkle of fun, remember this: food is not just sustenance; it’s a playground. And in this playground, the slides are buttered, the swings are coated in sweetened condensed milk, and the sandbox? Well, it’s filled with Rice Krispies waiting to be turned into something spectacular.

So, grab your spatula, and let’s make magic happen. Because in the end, Cake Batter Rice Krispies Treats aren’t just a snack; they’re a journey back to the joy of childhood, no cheesy musical analogies needed. Just pure, unadulterated fun, one sticky square at a time. Happy cooking!

Description

Forget everything you know about Rice Krispies treats—well, not everything because we’re keeping the snap, crackle, and pop. Discover the whimsical twist on a classic with our Cake Batter Rice Krispies Treats recipe, featuring sweetened condensed milk, vibrant sprinkles, and a mix of extracts for that irresistible cake batter flavor. Perfect for dessert lovers seeking a rich, gooey, and nostalgic treat.

Ingredients

Scale
  • 11/4 cups cake mix (white or Funfetti)
  • 12 tablespoons (170 grams) butter
  • 2/3 cup (192 grams) sweetened condensed milk
  • 12 cups (516 grams/18 ounces) mini marshmallows
  • 11/2 teaspoons clear vanilla extract
  • 1 teaspoon pure vanilla extract
  • 1/4 teaspoon almond extract
  • 10 cups (280 grams/10 ounces) Rice Krispies
  • 1 cup sprinkles (any kind you like)

Instructions

  1. Place the cake mix in a microwave-safe bowl and heat on high in 30-second intervals, stirring after each interval, until the cake mix reaches 165°F. This heat treats the raw flour in the cake mix and makes it safe to eat.
  2. Generously butter a 9 x 13-inch baking pan; set aside.
  3. In a large pot or Dutch oven, melt the butter over medium heat. Add the sweetened condensed milk and cake mix, whisking to dissolve the dry ingredients. Once everything is smooth, add the marshmallows, stirring often until completely melted.
  4. While you wait for the marshmallows to melt, put the Rice Krispies in the largest bowl you have (you may have to do this in two batches if you don’t think you can add all the ingredients and stir to coat in your largest bowl; keep the marshmallow mixture warm over medium-low heat if you have to do it in two batches). When the marshmallow mixture is homogenous and smooth, pour over the Rice Krispies, tossing with a rubber spatula until completely coated. Working quickly, pour into the prepared baking dish and press down gently with the spatula or buttered fingers to form an even layer. Generously sprinkle the sprinkles over top. Cut into squares and serve.

Notes

These will stay soft for a few days, longer than regular Rice Krispies treats, because of the sweetened condensed milk.
