February 2019 Cookbook Clique

Are you ready for a month of pasta?!  I’m in if you are.  This beautiful book, Backpocket Pasta by Colu Henry, is my pick for February’s cookbook clique, a place I hope to look to for inspiration and focus when deciding what to cook and try each month!

This cookbook pick is an inspired look at weeknight dinners, generally using a lot of pantry ingredients (if you have a decently stocked pantry) and a few plan-ahead items to grab from the grocery store.  I love meals like that, because despite what I wish my meal planning looked like, it often involves a peek into the pantry, fridge and freezer and seeing what’s there (and more frequently, what’s leftover or approaching it’s eat-me-now date).  This is a great book for those kinds of nights-admit it, we all have them-because the recipes are unique and delicious enough to make you want to dig deep in your fridge and pantry and eat some of those things you might not even know were in there!  Not to say that this recipe doesn’t involve tons of flavorful, fresh ingredients.  If you’re an efficient meal planner, you can eat like a king or queen from this book too!  This cookbook has a few salads and veggie side dish recipes too to round out a complete meal.

Buttery Basil Pesto with Linguine…OMG

 

Crab Fra Diavolo…yes please!

 

Tuscan Kale “Caesar” Pasta…one of my favorites salads in a pasta?! OK!

Proposal Chicken with Roasted Chicken and Mushrooms…any pasta with mushrooms and cream is top of my list!

 

Pasta alla Roman…I’m all about a hearty tomato-based pasta!

 

Fusilli Alfredo…this might just be the quintessential alfredo recipe you’ve been looking for!

 

Orecchiette with Fresh Corn & Burrata…the perfect pasta for summer!  Plus BURRATA, say no more!

 

Baked Ziti with Creme Fraiche and Spinach…I mean, that’s the cheese pull of my dreams right there!

 

Bucatini all’Amatriciana-ish…one of my favorite pasta noodles paired with a spicy, porky tomato sauce!
