Green beans wrapped in crisp bacon and covered in a butter and brown sugar glaze!

- 1–1/2 pounds haricots verts or green beans (trim ends if using green beans)
- 12 slices thick-cut bacon
- 1 stick (1/2 cup) butter
- 2 garlic cloves, finely minced
- 1/2 cup packed light brown sugar
- Pinch of cayenne
- Kosher salt and freshly ground black pepper
Instructions
- Bring a large pot of water to a boil over high heat. Prepare an ice bath using a large mixing bowl. Drop the green beans into the water and blanch for 1 minute to set the green color. Remove the green beans from the water and immediately place into the ice bath.
- Preheat the oven to 400°. Line a large baking sheet with aluminum foil. Lay the bacon slices in a single layer on the baking sheet and transfer to the oven. Bake for 18 to 22 minutes, until the bacon is beginning to crisp but is still pliable. Remove from the oven, transfer to a paper towel-lined plate and allow to cool slightly.
- Melt the butter in a small saucepan. Add the garlic and cook for 1 minute to soften the garlic. Add the brown sugar and cayenne and whisk to combine. Season to taste with salt and pepper.
- When the bacon is cool enough to handle, drain the green beans. Lay one slice of bacon on a cutting board and place a handful of green beans (about 10 to 12) onto the first 1/3 of the bacon. Begin wrapping the bacon around the green beans to form a tight knot. Secure with a toothpick, if necessary. Transfer to a baking dish or sheet. Continue with the remaining bacon and green beans. Season with salt and pepper to taste. Drizzle the butter-brown sugar mixture over the beans, ensuring you cover all of the bacon (this will help it crisp up). Transfer the baking dish to the oven and bake for 20 to 25 minutes, until the bacon is crisp and the green beans are crisp-tender.
