ON SUNDAYS WE BRUNCH IS A WEEKLY COLLECTION OF THOUGHTS, FAVORITES AND LINKS.  FOLLOW ALONG TO DISCOVER NEW THINGS AND REMEMBER OLD ONES!


Welcome to On Sundays We Brunch Series Five!  I’m hoping this will be a time for us to talk about life like we’re really sitting together over brunch and share favorites…articles, recipes, products, books, inspiration, whatever it may be!

Brunch is my favorite because the spirit is light, you have the whole day ahead of you afterwards, and all food is fair game and it often involves champagne.  Urban Dictionary defines brunchin’ as “Midday lunchin’ acting a fool in the mid-morning to lunch time”.  Could there be a more fitting description?

Grab a mimosa, pull up a chair and let’s chat!  Oh, and if anyone wants to act a fool, I’m game.

Have there been beautiful sunsets where you live lately?  I’ve always been captivated by sunsets…like I have to run out with my camera and snap a picture.

This was a loooong week, probably due to the fact that I didn’t get a good nights’ sleep for two days in a row.  I’m 100% an 8-hour-a-night kinda girl so I have hard days when I don’t get enough sleep.  This was compounded by the fact that I had writing fatigue last week too so it was harder than normal to get a few of my posts out!  Did you see The Essentials of a Well-Stocked Kitchen post?  That took me FOREVER to edit and write.  I’ve been working on the content for that post for months now, but I didn’t know how to make the collage posts.  It was super hard to find something on the Internet using the terms I was searching for, but I eventually find a few helpful articles and videos.  It’s near and dear to my heart because it’s all my favorite kitchen items that I use all the time!  But it was a beast to create and write.  That post made it hard for me to stay motivated for the rest of the week, but I love the way it turned out.  I gave myself a day off on Thursday and now I’m back to normal!

It’s a toss-up between this Bourbon Cream Corn and some buffalo cheese curds that I had last night at my favorite restaurant in Des Moines, The Cheese Bar.

READING INSPIRATION:

  • The Tyranny of the Exclamation Point is Causing Email and Text Anxiety-OMG, how many of us struggle with the overuse of exclamation point (or when you see that dreaded period-do they hate me????), especially in text messages or work e-mail?  I’m always going back and forth about what warrants an exclamation point, and I read back through my professional e-mails to count how many exclamation points I’ve used…!!!!
  • How to Actually Get 8 Hours of Sleep-see above for all my sleeping woes.  This article actually has some really awesome, actionable tips!
  •  Why the Japanese Art of Kintsugi is Your New Self-Care Hero-I read this article for work and found it so interesting.  Have you heard of kintsugi?  It’s a method by which broken pottery is repaired with lacquer and metals (often gold) to make the piece whole again-often to more beautiful results than the original piece.  Plus there’s a book link to Candace Kumai’s Kintsugi Wellness, which I’m pretty sure will be making an appearance in our book club sometime soon!

My September Book Bag (sorry, leftover from last week!), a tomato salad, a fall roast (don’t hate me), the best vanilla cheesecake, and a peach and chicken salad.  Apparently, it’s the week of random recipes!

Never thought I’d be the person writing a tater Never thought I’d be the person writing a tater tot casserole recipe, and yet… here we are. 🙃 I’ve never been much of a casserole person—something about the whole “dump a bunch of things in a dish and bake it” approach never really spoke to me. But then, I went to @guesthousetavernoyster in West Des Moines, IA, and had a version of this that was so absurdly good, I couldn’t stop thinking about it. 

Forget the cream-of-whatever soups and sad ground beef—this version goes full send: beef braised until it basically collapses into a rich, glossy sauce, smoky cheddar + parm layered on top, and a blanket of crispy tots that stay golden and crunchy. It’s comfort food, but with actual effort behind it. Big enough to feed a crowd (or fuel your leftover game all week). Who’s grabbing a fork first? 🥄🔥

There are few things in this world more satisfying There are few things in this world more satisfying than a perfectly crispy, cheesy, saucy Chicken Parmesan. But let’s be honest—most Chicken Parm out there is a sad, soggy mess. The crispy breading turns to mush under a blanket of sauce, the chicken is either dry or rubbery, and the whole thing is just… fine (like pizza, even a bad chicken Parm is still pretty good). And if I’m making Chicken Parmesan, I don’t want fine—I want the best. 

So, I went on a mission to create the ultimate Chicken Parm recipe: crispy and golden on the outside, juicy and flavorful on the inside, with a cheesy, saucy topping that enhances instead of destroys all that hard-earned crispiness. Spoiler alert: It’s a bit fussy. But I promise you, it’s worth it.
