Description

Delicate olive oil muffins bursting with orange flavor!


Ingredients

Scale
  • 11/2 cups (180 grams) all-purpose flour
  • 1 cup (200 grams) granulated sugar
  • 1 teaspoon kosher salt
  • 1/2 teaspoon baking powder
  • 1/4 teaspoon baking soda
  • 3/4 cup fruity extra-virgin olive oil (recommended: Enzo Delicate Olive Oil)
  • 3/4 cup whole milk
  • 2 large eggs, at room temperature
  • Zest of 1 orange
  • 3 tablespoons orange juice
  • 3 tablespoons Grand Marnier
  • 11/2 teaspoons Fiori di Sicilia
  • Powdered sugar, for dusting (optional)

Instructions

  1. Preheat the oven to 400°. Line a 12-cup muffin tin with paper liners.
  2. In a large mixing bowl, whisk together the flour, sugar, salt, baking powder, and baking soda.
  3. In a medium mixing bowl, whisk together the olive oil, milk, eggs, orange zest, orange juice, Grand Marnier, and Fiori di Sicilia.
  4. Make a well in the center of the dry ingredients and pour in the orange-olive oil mixture. Fold the ingredients together until they are just combined.
  5. Fill the muffin cups equally and transfer to the oven. Bake until the muffins are set, the tops are golden brown and a cake tester inserted near the center comes out clean, about 20 to 25 minutes. Rotate the pan halfway through the baking time. Remove from the oven and let cool slightly before serving.
  6. Dust with powdered sugar, if desired.
