Birthday-cake flavored muffins with a streusel topping and SPRINKLES…what more could you want for your birthday breakfast? Yes, I’m limiting this to breakfast because you still deserve a cake too.
I saw these on one of my favorite food blogs, The Candid Appetite, and they were just too fun not to make and share. Jonathan’s recipes are super-creative and his photos are always so colorful and enticing. Not only are these colorful and adorable, they’re tender, soft and extra-tasty. Have you hopped on the birthday cake-flavored everything train yet? It’s been rolling for a few years now and I’m here for it. I would rather have cake-flavored desserts than pumpkin spice desserts. No offense, pumpkin, but birthdays are better! 
These muffins are super moist from butter, sour cream and buttermilk in the batter, but they still remain extremely delicate and tender. A heavy dose of streusel is truly the crowning glory on these.
Do you know the secret to making something taste “cake-flavored”? It’s imitation vanilla, and you shouldn’t be scared of it. In this crazy world we live in, it may seem weird to add anything labeled ‘imitation’ to recipes, but it truly is the secret to that classic Funfetti cake flavor. Feel free to leave it out, but I’m confident you’ll miss it if you do.
