You should definitely put this one on your menu-this is extremely rich and luscious, and that perfect sweet-salty combination you need for a day full of partying, friends and, likely, some (ahem) beverages. This is one of those dips that will keep you dipping (haha) in and out of your fridge…if you have any leftovers. It’s best at room temperature so don’t be afraid to just eat it all in one sitting.
Caramelizing those onions just right is key, so put your patient pants on and prepare yourself for a good 45 minutes of stirring and checking on your onions. Don’t skimp on this step or you will not get that rich, sweet caramel flavor and color on your onions. Be prepared for this dip to go FAST!
Caramelized Onion Dip
- Yield: about 2 cups 1x
Ingredients
- 2 tablespoons extra-virgin olive oil
- 2 tablespoons butter
- 3 large yellow onions, sliced
- 4 ounces cream cheese, at room temperature
- 1/2 cup crème fraîche or sour cream
- 1/2 cup mayonnaise
- Hot sauce, to taste
- 1 to 2 teaspoons Worcestershire
- Kosher salt and freshly ground black pepper
- 1 teaspoon finely chopped chives, for garnish
- Potato chips, for serving
Instructions
Heat the olive oil and butter over medium heat in a large, heavy-bottomed Dutch oven or large skillet. When the butter is melted, add the onions and 2 teaspoons kosher salt, stirring to combine. Cook the onions over medium heat, stirring occasionally, until the onions are softened but have not begun to color, about 15 minutes. Lower the heat to medium-low and continue to cook, stirring occasionally, until the onions are a rich golden brown, another 45 to 50 minutes. Cool the onions before adding to the dip mixture.
Mix together the cream cheese, crème fraîche and mayonnaise in a medium mixing bowl. Season to taste with hot sauce, Worcestershire, salt and pepper. Stir in the onions. Garnish with the chopped chives.
