Completely Inauthentic Garlic-Cheese Bread

I call this completely inauthentic because you’re not likely to see a garlic-cheese bread like this on any menu at an Italian-American restaurant.  Nevertheless, it’s insanely delicious, addictive and indulgent so I couldn’t not share it!I first tried a garlic bread recipe similar to this years ago, and the taste stuck with me long after I lost the recipe.  I remembered the garlic-cheese spread having mayonnaise in it, and sought to find something similar.  As a mayo-lover, I welcome its addition with open arms to just about any recipe.  I know it sounds weird to put it on garlic bread, but it really just adds some rich creaminess and helps hold together the cheese spread.  This will definitely help you with those epic cheese pulls we all dream about!The recipe is as simple as infusing some butter with garlic and spreading it on a good loaf of ciabatta or soft French bread.  Toast it lightly then slather with this mixture of mayonnaise, three cheeses, and green onions.  Bake until melted and gooey.  Set it on the table and watch it fly off the plate!  As addictive as this is, I wouldn’t recommend making it a regular part of your diet as it’s suuuuper rich and indulgent.  Save it for those special occasions where bread, butter, cheese and mayo need a spot at the table!

Here’s a rich and indulgent (albeit inauthentic to any Italian cuisine) recipe for three-cheese garlic bread!


Ingredients

Scale
  • 2 cups (8 ounces) freshly grated yellow Cheddar cheese
  • 1 cup (4 ounces) freshly grated Pepper Jack cheese
  • 1/2 cup (2 ounces) freshly grated Parmesan
  • 1/2 cup mayonnaise
  • 4 green onions, white and green parts finely minced
  • Pinch of salt and freshly ground black pepper
  • 6 tablespoons butter
  • 3 to 4 garlic cloves, finely minced
  • 1 large loaf crusty ciabatta or French bread, halved
  • 1/4 cup chopped fresh flat-leaf parsley

Instructions

  1. Preheat the oven to 375°.  Line a large baking sheet with aluminum foil.
  2. Combine the cheeses with the mayonnaise, green onions, salt and pepper.  Set aside.
  3. In a small saucepan, melt the 6 tablespoons of butter.  Add the garlic cloves and sweat for about 2 minutes to release the garlic flavor.
  4. Place the bread halves on the prepared baking sheet.  Drizzle the garlic butter evenly over all of the bread.  Bake for 10 to 12 minutes, until lightly toasted.  Remove from the oven and spread with the cheese mixture.  Return to the oven and bake for an additional 10 to 12 minutes, until the cheese has fully melted.  Remove from the oven and sprinkle with chopped parsley.  Cut into wedges and serve.
