Completely Inauthentic Garlic-Cheese Bread

Description
Here’s a rich and indulgent (albeit inauthentic to any Italian cuisine) recipe for three-cheese garlic bread!
Ingredients
- 2 cups (8 ounces) freshly grated yellow Cheddar cheese
- 1 cup (4 ounces) freshly grated Pepper Jack cheese
- 1/2 cup (2 ounces) freshly grated Parmesan
- 1/2 cup mayonnaise
- 4 green onions, white and green parts finely minced
- Pinch of salt and freshly ground black pepper
- 6 tablespoons butter
- 3 to 4 garlic cloves, finely minced
- 1 large loaf crusty ciabatta or French bread, halved
- 1/4 cup chopped fresh flat-leaf parsley
Instructions
- Preheat the oven to 375°. Line a large baking sheet with aluminum foil.
- Combine the cheeses with the mayonnaise, green onions, salt and pepper. Set aside.
- In a small saucepan, melt the 6 tablespoons of butter. Add the garlic cloves and sweat for about 2 minutes to release the garlic flavor.
- Place the bread halves on the prepared baking sheet. Drizzle the garlic butter evenly over all of the bread. Bake for 10 to 12 minutes, until lightly toasted. Remove from the oven and spread with the cheese mixture. Return to the oven and bake for an additional 10 to 12 minutes, until the cheese has fully melted. Remove from the oven and sprinkle with chopped parsley. Cut into wedges and serve.
