I am 1) fully aware of how weird and gross these sound, and 2) BEGGING you to try them! They are so freaking delicious-the perfect amount of earthy and sweet, with a little citrus juice to wake them up, topped off with my fave…bubbles!!
I first had these at a local restaurant, St. Kilda, after alternating between thinking it sounded like the worst thing ever and being too intrigued not to try it. Well, friends, I’m here to tell the tale-and it was a delicious, slightly buzzed tale to tell. I don’t know who’s mind had the audacity to combine beet juice and figs, but I salute them for their courage (and ingenuity). It is a match made in heaven, even for beet haters (like me). I would dare to say you don’t even have to like beets or figs to enjoy this cocktail.
Me being me, I had to figure out how to recreate this at home and share it with you all. I think this is it! It’s super simple: get a jar of fig jam (fig jam with orange is also great), mix some orange and lime juices, beet juice and muddle some fresh figs. Strain it all into a pretty pitcher and dole out as needed. Top of with any sparkling wine-I recommend Prosecco as it’s more affordable than Champagne, but if you’re a baller, you can definitely go all the way.
I highly recommend buying beet juice versus trying to juice your own (unless you’re into that kind of thing). I most certainly am not and obtain mine from Trader Joe’s-which is perfect for this application because it comes it a small, handy container and contains almost all beet juice.
This is yet another example of me sharing (probably) too many photos with you. I LITERALLY CAN NEVER DECIDE WHICH ONES I LIKE BEST. Sometimes I hate them all, which makes it easy. Every so often, I truly can’t believe I (me!?) took the pictures and feel the need to share as many as my ego will allow before it explodes. Also, may I entice you to make these with more and more photos so you can see just how beautiful this cocktail can be???
Go grab some pretty cocktail glasses or champagne flutes, some beautiful fresh figs and some greenery and you have make this spread for your next brunch!
Fig Jam and Beet Mimosas
- Yield: about 8 mimosas 1x
Description
An earthy, slightly sweet take on your traditional mimosa: beet juice and fig jam are muddled with fresh figs and topped with Prosecco!
Ingredients
- One 8.5-ounce fig jam (fig jam with orange highly encouraged, too)
- 1 cup beet juice
- 1/2 cup orange juice (about 2 oranges)
- Juice of 1 large lime
- 6 fresh figs, halved plus more for garnish
- Prosecco, Champagne or sparkling wine
Instructions
- In a medium mixing bowl, combine the fig jam, beet juice, and orange and lime juices, and whisk to combine.
- In a small bowl, muddle the fresh figs with the back of a wooden spoon to release as much of the juice as possible. Pour the figs and their juice through a strainer into the bowl with the jam-juice mixture, pressing down with the back of a spoon to press out the liquid. Discard the crushed figs. Strain the mixture into a small pitcher, swirling to push as much juice through as possible.
- To serve, pour 2 ounces of the mimosa mix into a serving glass or champagne flute. Top with Prosecco, to taste (start with 2 ounces). Garnish with halved figs and lime and orange halves.
