Green Goddess Salmon Burgers are your new weeknight quick-fix meal!  The meal is prepped almost entirely in the food processor and after a quick sear in a hot pan, you will have something healthy and delicious on your table…and more importantly, in your mouth.

I kind of have a hang-up about ground protein/meat, especially fish.  Something about grinding fish into a paste creeps me out.  I’m really selling this, huh?

Except obviously I did it here and obviously I lived to tell the tale.  Dare I say I even liked it?

This green goddess sauce is my new favorite thing.  Full of avocado, herbs and lemon, it is so bright, fresh and flavorful.   Salads and sandwiches are definitely made better by it! You can add spinach or arugula to really green-goddess it up and pack more flavor and nutrients into the sauce.  More to come on that in the future.

Salmon is such a forgiving fish to cook.  Because it’s an oilier fish, you have a little more leeway in the cooking process-it can withstand higher heat and even accidental slight overcooking.

I’m working towards moving past my ground fish weirdness with these burgers.  But hey, my hang-ups aren’t your hang-ups so make these!

Description

Salmon burgers seared until golden-brown and topped with the most glorious, flavorful green goddess sauce!


Ingredients

Scale

GREEN GODDESS SAUCE:

  • 2/3 cup plain full-fat Greek yogurt
  • 1/3 cup mayonnaise
  • 1 avocado, halved, pitted and peeled
  • 1 garlic clove, finely minced
  • 1/4 cup chopped fresh flat-leaf parsley
  • 1/4 cup chopped fresh basil
  • 2 tablespoons finely minced fresh chives
  • Juice of 1 lemon
  • Kosher salt and freshly ground black pepper

SALMON BURGERS:

  • 1 pound boneless, skinless salmon, cut into 4 pieces
  • 1 shallot, minced
  • 2 garlic cloves, minced
  • 1 large egg
  • 1/3 cup panko bread crumbs, lightly crushed
  • 1/2 teaspoon paprika
  • Kosher salt and freshly ground black pepper
  • 2 tablespoons chopped fresh flat-leaf parsley
  • 2 tablespoons chopped fresh basil
  • 4 tablespoons olive oil, divided
  • Sliced avocado, for topping
  • Butter lettuce leaves, for topping
  • Super Sesame Buns or other buns of your choice, lightly toasted


Instructions

  1. For the Green Goddess Sauce: Combine all of the ingredients in the food processor and process until thoroughly combined.  Season to taste with salt and pepper.  Refrigerate for at least 1 hour to allow the flavors to meld.
  2. For the Salmon Burgers: Place the salmon in the bowl of a food process and pulse until coarsely ground, leaving some texture in the meat.  In a large mixing bowl, combine the shallot, garlic, egg, panko bread crumbs, paprika, salt, pepper parsley and basil, mixing to combine thoroughly.  Add the salmon and gently combine, taking care not to overmix.  Form the mixture into 4 equal-sized patties, pressing down lightly to flatten.
  3. Preheat a large skillet over medium heat.  Ensure your skillet is properly preheated or you won’t get that golden-brown crust on your burgers.  Add 2 tablespoons of olive oil; once hot, add the burgers, and cook until golden-brown, about 3 minutes per side.  
  4. To assemble, spread a little of the green goddess dressing on the bottom of your bun.  Place the butter lettuce leaves on top, add the burger, sliced avocado and a big dollop of green goddess dressing on top.  Repeat with the remaining burgers.

Never thought I’d be the person writing a tater Never thought I’d be the person writing a tater tot casserole recipe, and yet… here we are. 🙃 I’ve never been much of a casserole person—something about the whole “dump a bunch of things in a dish and bake it” approach never really spoke to me. But then, I went to @guesthousetavernoyster in West Des Moines, IA, and had a version of this that was so absurdly good, I couldn’t stop thinking about it. 

Forget the cream-of-whatever soups and sad ground beef—this version goes full send: beef braised until it basically collapses into a rich, glossy sauce, smoky cheddar + parm layered on top, and a blanket of crispy tots that stay golden and crunchy. It’s comfort food, but with actual effort behind it. Big enough to feed a crowd (or fuel your leftover game all week). Who’s grabbing a fork first? 🥄🔥

There are few things in this world more satisfying There are few things in this world more satisfying than a perfectly crispy, cheesy, saucy Chicken Parmesan. But let’s be honest—most Chicken Parm out there is a sad, soggy mess.
