This is an oddly satisfying, sweet-and-spicy grilled cheese sandwich: mango puree, pepper Jack cheese and peppery watercress make a unique combination. The first time I made this, I was like “bleh.” I was indifferent and not really impressed with the flavor combination. I made it another time after I again saw the episode of Barefoot Contessa where Ina make it with a famous NY caterer. I made a few tweaks, and upped the amount of mango purée on each bread slice. This second take produced a sandwich I couldn’t stop eating. It was craveable! Oh, and if you didn’t know…it’s sandwich week on Never Not Hungry! We just wrapped up breakfast week last week-these two weeks came about because I looked at my recipes and realized I had SO MANY breakfast and sandwich recipes that I just needed to feature them exclusively for a few weeks so my recipe cadence could even out. Description
This oozy grilled cheese sandwich is a little sweet from mango purée, a little spicy from pepper Jack cheese and a little peppery from watercress…a unique and totally craveable combination!
Ingredients
- 8 slices of bread
- 4 tablespoons butter, at room temperature
- 2 tablespoons mayonnaise
- 1 fresh mango, peeled, pitted and cubed OR 1 cup frozen mango chunks, defrosted
- 1 cup watercress (about 1 ounce)
- 16 slices Pepper Jack cheese
Instructions
- Combine the butter and mayonnaise and mix together until thoroughly combined. Spread one side of each piece of bread with this mixture. Flip the bread over to the unbuttered side.
- Place the mango in a blender and blend until completely smooth. In a small saucepan, place the mango puree and cook down for about 5 minutes, until slightly thickened and reduced.
- Preheat a large nonstick skillet or griddle over medium heat.
- Spread a thin layer of the mango puree on all eight slices of bread and top each with two slices of Pepper Jack. Top two slice with a handful of the watercress and the remaining slices of bread.
- Place the sandwiches in the preheated skillet and reduce the heat to medium-low. Cook until the bread is golden brown and the cheese is melted, about 5 to 6 minutes per side. Slice the sandwich in half and serve hot!
