Individual Breakfast Pot Pies with Sausage & Veggie Gravy

Breakfast pot pies with veggies, sausage gravy, and a puff pastry lid with a soft egg inside?!  I’ll belly right up to the table for that one.Not only are they wildly cute, they’re individually portioned and perfectly scalable to feed a crowd for breakfast.  You just need mini cast-iron skillets; I used these 5-inch ones, but there are 6-1/2-inch skillets that are lower in price.  Either size would work in this recipe, but you might need to scale up the ingredients if you use the larger ones.  These are great to have on hand if you’re into adorable, individual servings of dishes.  You could make individual skillet cookies, pot pies, mini pizzas, casseroles, really anything in these!The recipe essentially involves two components: sautéing the veggies and sausage making a gravy, and preparing the puff pastry.  After the pastry bakes up, you just have to assemble the dish by scooping some sausage gravy into your mini skillets, topping with the puff pastry and cracking an egg in the center.  Bake until the egg is just set and serve it up to ooh’s and ahh’s and all the fuzzy feels. I’m such a sucker for mini things.
