On Sundays We Brunch: Series 9

Welcome to On Sundays We Brunch Series Nine!  I’m hoping this will be a time for us to talk about life like we’re really sitting together over brunch and share favorites…articles, recipes, products, books, inspiration, whatever it may be!

Brunch is my favorite because the spirit is light, you have the whole day ahead of you afterwards, and all food is fair game and it often involves champagne.  Urban Dictionary defines brunchin’ as “Midday lunchin’ acting a fool in the mid-morning to lunch time”.  Could there be a more fitting description?

Grab a mimosa, pull up a chair and let’s chat!  Oh, and if anyone wants to act a fool, I’m game.


Thanks for joining me here again on this snowy winter day!  I’m dying for a trip to a sunny, warm climate, but I’ll settle (for now) for relieving a trip to the South of France last year.

I’m trying out a new trick I read about in a book to help me stay consistent with blogging: I’m all about checklists, visually seeing my progress and have a burning urge at all times to feel like I’m accomplishing something.  To a fault, I have to complete things on my to-do list and finish something I started; it physically pains me to leave something unfinished…like even listening to podcasts or watching TV shows I don’t like.  I’m getting better with this one as I recently just deleted several podcasts that bring me no joy, Marie Kondo-style.  Anyway, I’m trying to treat my blog more like a business and consistently posting content every day so I’m using the “Seinfeld Strategy” that I read about in Die Empty.  

 

The “Seinfeld Strategy”

Brad Isaac was a young comedian starting out on the comedy circuit. One fateful night, he found himself in a club where Jerry Seinfeld was performing. In an interview on Lifehacker, Isaac shared what happened when he caught Seinfeld backstage and asked if he had “any tips for a young comic.”

Here’s how Isaac described the interaction with Seinfeld…

He said the way to be a better comic was to create better jokes and the way to create better jokes was to write every day.

He told me to get a big wall calendar that has a whole year on one page and hang it on a prominent wall. The next step was to get a big red magic marker. He said for each day that I do my task of writing, I get to put a big red X over that day.

“After a few days you’ll have a chain. Just keep at it and the chain will grow longer every day. You’ll like seeing that chain, especially when you get a few weeks under your belt. Your only job is to not break the chain.”

Never thought I’d be the person writing a tater Never thought I’d be the person writing a tater tot casserole recipe, and yet… here we are. 🙃 I’ve never been much of a casserole person—something about the whole “dump a bunch of things in a dish and bake it” approach never really spoke to me. But then, I went to @guesthousetavernoyster in West Des Moines, IA, and had a version of this that was so absurdly good, I couldn’t stop thinking about it. 

Forget the cream-of-whatever soups and sad ground beef—this version goes full send: beef braised until it basically collapses into a rich, glossy sauce, smoky cheddar + parm layered on top, and a blanket of crispy tots that stay golden and crunchy. It’s comfort food, but with actual effort behind it. Big enough to feed a crowd (or fuel your leftover game all week). Who’s grabbing a fork first? 🥄🔥

There are few things in this world more satisfying There are few things in this world more satisfying than a perfectly crispy, cheesy, saucy Chicken Parmesan. But let’s be honest—most Chicken Parm out there is a sad, soggy mess. The crispy breading turns to mush under a blanket of sauce, the chicken is either dry or rubbery, and the whole thing is just… fine (like pizza, even a bad chicken Parm is still pretty good). And if I’m making Chicken Parmesan, I don’t want fine—I want the best. 

So, I went on a mission to create the ultimate Chicken Parm recipe: crispy and golden on the outside, juicy and flavorful on the inside, with a cheesy, saucy topping that enhances instead of destroys all that hard-earned crispiness. Spoiler alert: It’s a bit fussy. But I promise you, it’s worth it.
