This is my very favorite way to make guacamole.  It’s so flavorful while staying true to the flavor of the buttery, rich avocado.  But, to be clear, in no way am I implying that this is an authentic guacamole recipe, which may include simply mashed avocados with a little lime juice and salt, or with a few mix-ins like hot chiles, onion, cilantro and/or chopped tomatoes.My version has a little lemon juice in addition to the lime juice, garlic, chives, cumin and hot sauce.  All of these offer just a whisper of flavor in the recipe as written to keep the taste of the avocados in the forefront, but you can adjust to your taste.  I love to drizzle just a little olive oil over top before serving for richness too.  Just make sure to season your guacamole aggressively with salt so it actually tastes like something!You can use either a serrano or jalapeño, seeded or not, depending on how hot you want your guacamole.  A few dashes of Tabasco (or your favorite hot sauce) adds a little more spice, but also some vinegar to cut through the richness.  Mash to smooth, or leave it chunky.  Really, everything is up to you with guacamole!  Just start with the basic ingredients and adjust to your liking.  While I didn’t do it for these photos, I do love adding chopped tomatoes into the guac-it adds a hit of sweetness and acid into an otherwise very rich dip.My very favorite tortilla chips are the blue corn chips with amaranth, quinoa and chia seeds from Trader Joe’s because they are so crisp and crunchy.  I highly recommend stocking up on your next TJ’s run so you can dip into this guacamole with the best chip ever.

You can serve this as-is for an appetizer, or put it on burgers, in sandwiches, on nachos, on pizza, on cardboard (JK), etc.  It’s good on literally everything, but especially anything Mexican or with Latin-American flavors.  Plan a taco night with your friends, and you’ve already got the first dish down with perfect guacamole recipe!

Description

This is my perfect guacamole recipe: it has tons of flavor and mix-ins, all while keeping the beautiful, rich avocado flavor in the forefront!  Use this recipe as a guide, adjusting each flavor to suit your taste.  Just be sure to aggressively season your guacamole with salt to keep it from going into bland territory.


Ingredients

Scale
  • 4 large, ripe avocados, peeled, pitted and cut into large cubes
  • Juice of 1/2 lemon, plus more to taste
  • Juice of 1 lime, plus more to taste
  • 1/4 of a red onion, finely minced
  • 1/2 to 1 jalapeno or serrano, finely minced (seeded, if you wish)
  • 1 small garlic clove, grated
  • 1/2 teaspoon ground cumin, plus more to taste
  • A few dashes of hot sauce, to taste
  • Kosher salt and freshly ground black pepper, to taste
  • 2 tablespoons finely chopped fresh cilantro, plus more for garnish
  • 1/4 cup quartered cherry tomatoes, optional
  • Extra-virgin olive oil, for drizzling
  • 1 tablespoon finely chopped fresh chives, to garnish
  • Tortilla chips, for serving


Instructions

  1. Place the avocado cubes in a large mixing bowl.  Add the lemon and lime juices, red onion, jalapeno and grated garlic; mash with a fork to combine.  You can either mash completely for smooth guacamole, or leave it chunky-it’s up to you!  Season to taste with cumin, salt, pepper and hot sauce.  Stir in the cilantro and cherry tomatoes, if using.
  2. Transfer to a serving bowl and drizzle with a little olive oil.  Sprinkle more chopped cilantro and the chives over top, if desired.  Serve with tortilla chips.

Never thought I’d be the person writing a tater Never thought I’d be the person writing a tater tot casserole recipe, and yet… here we are. 🙃 I’ve never been much of a casserole person—something about the whole “dump a bunch of things in a dish and bake it” approach never really spoke to me. But then, I went to @guesthousetavernoyster in West Des Moines, IA, and had a version of this that was so absurdly good, I couldn’t stop thinking about it. 

Forget the cream-of-whatever soups and sad ground beef—this version goes full send: beef braised until it basically collapses into a rich, glossy sauce, smoky cheddar + parm layered on top, and a blanket of crispy tots that stay golden and crunchy. It’s comfort food, but with actual effort behind it. Big enough to feed a crowd (or fuel your leftover game all week). Who’s grabbing a fork first? 🥄🔥

There are few things in this world more satisfying There are few things in this world more satisfying than a perfectly crispy, cheesy, saucy Chicken Parmesan. But let’s be honest—most Chicken Parm out there is a sad, soggy mess.
