Vietnamese Meatball Lettuce Wraps

Hey, let’s sneak a secretly healthy, but not shy on flavor, meal into our regular rotation.  ‘Cause we’ve got New Year’s Resolutions, right?  Ok, well not me, but I’ll happily belly up to eat these with all of you!These Vietnamese Meatball Lettuce Wraps are a quick-cooking dream for nights when you can barely get your crap together to feed yourself (let alone, others).  But don’t save these for those nights alone…these should deserve a spot on any table!  I love these not just for all the reasons already stated, but because they are super colorful and the veggies are crisp and crunchy and the perfect foil for the meatballs.Let’s just talk about these meatballs for a sec.  They are crispy, golden-brown spheres of porky goodness…that sounds weird, right? I know, but I’m not deleting it.  We’ll just get back to the actual composition of the meatballs…ground pork is mixed with sauteed mushrooms and shallots, garlic, fish sauce (if you’re scared, don’t be…just buy high-quality Red Boat fish sauce), sugar, cilantro and green onions then crisped up in a pan with a little oil.  Honestly, they’re so tasty and contain the only fat in this recipe…perfect for #healthy or #newyearsresolutions.  I took inspiration from the lime dipping sauce from my Shaking Beef recipe to make the perfect spicy-sweet-sour accompaniment to the lettuce wraps for all your dipping and drizzling needs.

So often, lettuce wraps get relegated to “diet food” or “low carb” but can’t we just love them as downright delicious albeit healthier-than-a-lot-of-things-we-could-be-eating-right-now?  If you need more lettuce wrap inspiration, you can also make these Chicken Lettuce Wraps (from the way beginning of my blogging!).  Oh and never fear, I have more recipes waiting in the wings to come within the next few months.  Stay tuned!I hope you love these just as much as I do.  Oh, and these make the best quick dinner and are the perfect leftovers for lunch…making them an A++ in my book!
