On Sundays We Brunch: Series 15

Welcome to On Sundays We Brunch Series Fifteen!  I’m hoping this will be a time for us to talk about life like we’re really sitting together over brunch and share favorites…articles, recipes, products, books, inspiration, whatever it may be!

Brunch is my favorite because the spirit is light, you have the whole day ahead of you afterwards, and all food is fair game and it often involves champagne.  Urban Dictionary defines brunchin’ as “Midday lunchin’ acting a fool in the mid-morning to lunch time”.  Could there be a more fitting description?

Grab a mimosa, pull up a chair and let’s chat!  Oh, and if anyone wants to act a fool, I’m game.


I know this is late in the day for brunch but let me tell you about the last 48-ish hours!  I woke up Friday morning to the realization that something had happened with my website and it was spamming and redirecting every visitor to sites of highly questionable content and security.  It’s hard to describe exactly how crappy it felt, but maybe something akin to something you have worked on for over 2 years and put innumerable hours (and money!) into that is incredibly important to you both personally and professionally in the journey to achieve your life goals suddenly disappearing-like being deleted off your computer and you’re at the point in your panic where you’re not sure if you can recover it.  With a little help from my hosting company, and some sleuth work on my end, she’s back up and running and I hope for this to never happen again!  WHEW.

This is what we did today while I waited to see if my baby would be coming back to life.  Hopefully my very late post today is excusable for these reasons!  Let’s get to it.

THE BEST THING I ATE ALL WEEK:

I didn’t do a lot of cooking this week because I was extra-busy!  I had a few great meals out, including these meltingly tender pork belly skewers from a Japanese restaurant near my home.  I also went back to my hometown of Cedar Rapids, IA for my brother’s fiancé’s bridal shower and got to eat at my very favorite restaurant, possibly in the world.  It’s called Lincoln Wine Bar and it’s in a little Iowa town called Mount Vernon and is worth a pilgrimage.  Wood-fired Neopolitan-style pizza in tons of unique and exciting combinations (my all-time favorite is the Greens pizza, which I recreated here).  They always have some form of burrata as an appetizer (also, I recreated one of their staples here), but this weekend they had a new, unusual one with a schmear of golden beet romesco sauce.  I was totally NOT excited about that but it was a total showstopper.  I will be recreating!

Guys, apparently I have a thing for sandwiches, because I made a list of all my recipes I had locked and loaded and ready to share and like 55% are sandwiches!  I’ll be working on creating some new main dish content, but bear with me while I share lots of delicious sandwiches in the upcoming weeks!  I’m going to try not to do more than one per week…

In that vein, next week I’m sharing a spinach-artichoke grilled cheese, a sour cream coffee cake, cheesy sausage dip, mini asparagus lasagnas and my favorite recipe for Neapolitan-style pizza dough.  Plus my March lifestyle favorites and another week of brunchin’.
